St Margarets Souvlakia

Serves 8 people. Ready in about 10 minutes ( plus 30 minutes marinating )

     
1 tbsp fresh oregano
2 cloves garlic
1 tbsp lemon juice
2 tbsp dark soy sauce
2 lbs pork fillets (1 kilo)
  1. Make the marinade: crush the garlic, place in a small bowl with the oregano, lemon juice and soy mix.
  2. Cut the pork into thick slices and lay in shallow non metallic dish. Pour over marinade and refrigerate for at least 30 minutes.
  3. Push the meat on to barbecue skewers and grill or place on barbecue. Turn frequently for 10-15 minutes until cooked through.
